Lightly grease a small ramekin with coconut oil (or nonstick cooking spray)
Add the oats, mashed banana, baking powder, vanilla extract, cinnamon, maple syrup and almond milk to a bowl. Stir well to combine.
Mix the blueberries into the mixture.
Pour the mixture into a small ramekin and top with more blueberries.
Place in the oven and bake for approximately 25 – 30 minutes, until the top is golden.
Remove from oven and allow to cool for 5 minutes.
Top with a spoonful of nut butter (gives it a rich & creamy taste) and/or crumbled walnuts.
Notes
I didn’t add any maple syrup, as I found it to be sweet enough with the mashed banana and blueberries in the mixture. However, if you like it sweeter add maple syrup to your liking.
