Combine the pancake mix, oil and water in large bowl, stirring vigorously with a whisk until powder is just combined and no lumps remain (approximately 10 – 15 stirs)
Fold in the chocolate chips and mix again.
Lightly grease a cast-iron skillet with coconut oil and pour the batter into the skillet and sprinkle a few more chocolate chips on top.
Place in the oven and bake for 22 minutes, or until pancake is baked through.
Remove from oven and allow to cool for five minutes in the skillet. Cut into four slices and serve with maple syrup and banana.
